Chocolate Self-Saucing Pudding
60g butter
1/2 cup milk
1 teaspoon vanilla essence
3/4 cup caster sugar
1 cup self-raising flour
1 tablespoon cocoa
3/4 cup brown sugar, firmly packed
1 tablespoon cocoa, extra
2 cups boiling water
1. Combine
butter and milk in large pan; stir over heat until butter is melted.
Remove from heat; stir in essence and caster sugar, then sifted flour
and cocoa.
2. Spread
mixture into greased ovenproof dish (6-cup capacity). Sift brown
sugar and extra cocoa over mixture, then gently pour boiling water
over mixture.
3. Bake in moderate oven about 40 minutes.
Serves 4 to 6.
Recipe best made just before serving.

Believe it or
not cookies
1 cup peanut butter
1 egg
1 cup sugar or
equivlent amount of sweetner
1 ts. vanilla
Mix well.
Make small balls and flatten with fork
on cookie
sheets. Bake 6-8 minutes at 325 degrees.
In hot weather,
chill dough first.

Chocolate
Peanutbutter Bars
ingredients
1 cup of peanutbutter
1 1/2 sticks of butter-melted
1 box of powdered sugar
1 bag of chocolate chips( I use semisweet)
Mix first 3 ingredients together well and press into 9" x 13" greased baking dish.
Melt chocolate
chips and pour over
peanutbutter
mixture. Spread evenly.
Refrigerate
until chocolate
is hard enough
to slice through
but not
hard enough to
crack when you
cut it. Cut into squares and eat! :)
**Tip: if you refrigerate
for too long
and your
chocolate
topping is too hard to cut
without
breaking; put the
baking dish in
the oven
on broil for a minute
or two just
until the chocolate
softens enough
to cut easily.
